Chickpea Panisse
Chickpea panisse with salsa verde, the snack Delphine suggests for apéro hour with a Colleti Royale or Lillet Spritz.

Delphine at Costa Palmas is a French Riviera beach club and restaurant on the East Cape, on the sand of the Costa Palmas resort community near La Ribera, about 64 km by road from Los Cabos International Airport. Chef Ludo Lefebvre wrote the Niçoise-inspired menu, and Delphine serves lunch only, Wednesday to Sunday from noon to 6 pm. It is not limited to hotel guests: Costa Palmas says its members, Four Seasons guests and day visitors are all welcome, and all of them need a reservation. Tables sit on the pavilion's open-air patio and on the sand beside sunbeds under yellow umbrellas, facing the calm, swimmable Sea of Cortez. Mains run from 750 to 1,750 pesos and signature cocktails from 450 to 600 pesos.
Delphine opened in the summer of 2024 as a partnership between Costa Palmas and Lefebvre, a French-trained chef known for Petit Trois in Los Angeles and Chez Maggy in Denver. He told The Hollywood Reporter that Niçoise food is his favorite cuisine and that he wanted guests to feel they had stepped into a beach club in the South of France. The menu changes with the seasons: the opening summer brought grilled Baja shrimp flambéed with pastis, and today's card runs from tuna crudo to steak au poivre. Champagne is sabered at the table, a DJ sets the music, and La Boutique sells sun hats, jewelry and resort wear.
Chef Ludo Lefebvre — Delphine's site introduces him as a Michelin-star chef; his menu leans on local produce, Sea of Cortez seafood and herbs from the region.
A beach you can swim — unlike many shorelines around Los Cabos, the water in front of Delphine is calm enough to swim.
Open to day visitors — no hotel stay is needed. Book ahead, and reserve a sunbed and umbrella at the same time.
Champagne and rosé — a cellar of Champagne, Provence rosé and French and Californian wines, from Billecart-Salmon to Krug and Cristal.
Chickpea Panisse — Chickpea panisse with salsa verde, the snack Delphine suggests for apéro hour with a Colleti Royale or Lillet Spritz.
Niçoise Salad — Grilled yellowtail with market vegetables and a lemon vinaigrette, Delphine's version of the salad of Nice.
Wood Grilled Salt & Vinegar Seabass — Sea bass from the wood grill with a salt-and-vinegar finish, basil pistou and lemon confit.
Steak au Poivre — Steak with a cognac peppercorn sauce and frites, one of the dishes Delphine names for its long lunch.
Lobster Spaghetti — Spaghetti with lobster in a brandy tomato sauce, from the sea-and-land mains on the Delphine lunch menu.
Tropézienne Tart — A Riviera dessert named for Saint-Tropez, the sweet finish Costa Palmas suggests after lunch.
