Fresh Tuna Tartare Trilogy
Three tartares of fresh tuna: cucumber, cilantro and avocado; caper, chile oil and pistachio; mango, chive and cashews.

7 Seas Seafood Grille is an oceanfront seafood restaurant inside Cabo Surf Hotel on Acapulquito Beach, at Km 28 of the Transpeninsular Highway in San José del Cabo. The dining room sits under a large palapa roof, with an iron railing along the terrace above the sand and the surf break the hotel calls Old Man, or Acapulquito. It opens every day from 7:00 AM to 11:00 PM for breakfast, lunch and dinner. The kitchen describes its cooking as Sea of Cortez flavors and Baja-grown ingredients, starting from the catch of the day. Dinner mains run from 590 pesos for the sea bass or filet tacos to 1,310 for the filet and shrimp surf and turf, before the 16% tax; lobster is priced at market.
The executive chef is Alejandro Rodriguez Ponce, whose name heads every menu. The restaurant says his cooking keeps Baja in the foreground, with seafood selected for freshness and produce sourced close to home. The menus add that the bread, corn tortillas, dressings and pickles are made in house, that the seafood comes from Baja California Sur, and that the vegetables and whole chickens are organic from the Miraflores area. Breakfast brings waffles, eggs Benedict, chilaquiles and machaca; lunch adds ceviches, a taco bar and poke bowls; and dinner moves on to tartares, homemade ravioli, grilled fish, steaks and lobster. The bar mixes mezcal and tequila cocktails, pours a Cabo Surf draft lager among its craft beers, and lists wines from the Valle de Guadalupe.
