Nick-San opened in 1994 — making it the first Japanese-Mexican fusion restaurant in Los Cabos and one of the city's longest-running dining institutions, marking three decades of continuous operation in 2024. The restaurant was founded by Chef Ángel Carbajal, born in Michoacán, alongside Tokyo restaurateur Masayuki Niikura (the "Nick" and "San" of the name). The original 1994 dining room had seven tables and a 24-seat sushi bar; today the renovated Plaza de la Danza space evokes the texture of both downtown Tokyo and the quiet beauty of rural Japan.
What to order. Two dishes anchor the legend. The Tuna Tostada — a rice-flour tostada with minced tuna, avocado, habanero-pickled red onion, and sesame — was created by Carbajal as a tribute to his mother and is the single most-requested plate. The Lobster Maki is a dish Carbajal originally prepared for his father; both are now Nick-San signatures and the format Cabo's other Japanese restaurants now imitate. Other standouts: the black-and-white tuna sashimi, sashimi serranito, tekka don, and fresh salmon Nicksan-style.
