Khao Soi Spicy Crab Noodle
Northern-style egg noodles in a crab curry broth with fried soft-shell crab, pickled mustard greens, red onion and crispy noodles.

Talay Thai Kitchen is the open-air Thai restaurant at Montage Los Cabos, the Five-Star resort on Santa María Bay at kilometre 12.5 of the Tourist Corridor. Its name means sea in Thai. Chef Marc Narongchai serves the menu street-truck style from an open kitchen with a wood grill, and guests sit at outdoor tables, booths or the bar under trees hung with lanterns. The menu moves from soups and curries to traditional Thai mains and fire-grilled dishes, and the kitchen will adjust the heat to your taste. Talay serves dinner only, every day from 6:00 PM to 10:00 PM, and takes reservations on OpenTable or by phone. It shares the resort with Mezcal, Marea, the Sushi Bar and Paletas, and it is the only Thai kitchen among them.
The Thai theme carries into the design. A full-size Buddha statue greets guests, the kitchen's palm-frond roof takes its cue from the beaches of Thailand, and the bar has a bamboo texture. Tropical plants, hanging lanterns and candles on the tables set the evening mood, and the open kitchen lets you watch the cooks at work. The menu opens with an offer: Chef Marc will cook a family-style menu of Talay's signature dishes for the whole table, with the heat level and dietary restrictions adjusted to your group. Some dishes carry his name, like Narongchai's green curry and Marc's fried chicken, and the crispy whole fish comes with what the menu calls "my mom's sweet chili sauce". Families get a children's menu with fried rice, pad see ew, noodle soup and Thai fried chicken fingers.
