Carbón Cabrón is a wood-fire restaurant on the Tourist Corridor at Kilómetro 24.5 of the Transpeninsular highway, on Boulevard Cerro Colorado in San José del Cabo. Everything on the menu passes over mesquite embers and smoke, from a charred onion built to look like a lump of charcoal to the catch of the day and a short list of offal the kitchen calls the Black Market. The restaurant kept its place in the MICHELIN Guide for 2026 as a Recommended restaurant, one of eight in San José del Cabo, and it is open every night of the week from 6 pm to 10 pm. Prices sit at the top of the scale: the chef's menu is 2,200 pesos, mains run from 590 to 990 pesos, and house cocktails are 250 to 290 pesos, taxes included.
The kitchen belongs to chef Poncho Cadena, who describes his cooking as a ritual of fire: organic produce and seafood from the peninsula, transformed by mesquite embers and smoke. The room matches the idea. Stacked firewood lines the entrance, the dining room is dark and lit low, and the grill sits in view of the tables. The same team also cooks away from the restaurant: with at least four days' notice, Cadena and his staff take over the kitchen and grill at a private villa for a dinner built on vegetables, seafood, fish and meat, quoted on request.
MICHELIN Guide 2026 — kept its recommendation in the 2026 selection for Baja California Sur, alongside seven other San José del Cabo tables.
Chef Poncho Cadena — cooks over mesquite with organic produce and seafood from the peninsula, and brings the same grill to private dinners on request.
Vegetables treated like mains — beets with beet butter, corn to the coals, broccoli with a short mole, heirloom tomato with carrot-leaf pesto, all in the 290 to 590 peso range.
A cocktail list built on Baja spirits — Condesa prickly pear gin, Tequileño blanco and espadín mezcal in seven house cocktails, plus the classics and a wine selection your waiter walks you through.
Carbón Vegetal — tempura onions blackened to look like charcoal, with habanero aioli and black recado; a tribute to chef Roberto Solís of Néctar in Mérida.

What diners say
A Michelin-recognized live-fire kitchen tucked into El Merkado near San José del Cabo, Carbón Cabrón cooks nearly everything over open flame — and diners say the real surprise is the vegetables: smoky grilled corn and leek draw as much praise as the well-marbled cuts. The setting is theatrical (open kitchen, stacked firewood, shared tables, a moody almost-Tim-Burton design) and service earns standout marks for warmth and attention. Regulars call it one of the best meals in Los Cabos and worth the splurge. The recurring caveat is price — it runs high, a few feel the cuts aren't true prime, and one or two flagged billing surprises, so review the check. Tip: ask about the charcoal-grilled vegetables and the open-fire specials.
