Cream of Prawn and Pumpkin Soup
A 12-ounce cream of prawn and pumpkin that the menu calls a 33-year tradition of the house.

Café des Artistes Los Cabos is a fine-dining restaurant by chef Thierry Blouet inside JW Marriott Los Cabos Beach Resort & Spa, in the Puerto Los Cabos development of San José del Cabo. The kitchen pairs Mexican ingredients with French technique in what the restaurant calls an elegant Mexican-style setting overlooking the Sea of Cortez. The resort lists dinner Tuesday to Sunday, 5:00 PM to 11:00 PM, with live piano every evening and a smart casual dress code. Resort photos show a dining room with a grand piano and tall windows onto the sea, glass-drop lamps over long wooden tables, and a courtyard where a tree grows out of a reflecting pool beside a glass wall of wine. The hotel is about 15 minutes from downtown San José del Cabo.
The first Café des Artistes has been cooking in downtown Puerto Vallarta since 1990. For Los Cabos, Blouet says he chose the dishes guests have liked most over the years and refreshed them with local ingredients, keeping French techniques with mostly Mexican flavors and products. Born in Puerto Rico in 1964 to French parents, he was educated in France and Mexico and began his career in 1983. The à la carte menu runs from Baja California oysters and baked soft cheese from El Tuito to chargrilled totoaba, veal cheek in red wine with red mole, and a 35-ounce tomahawk to share. A wine cellar with Baja California labels, a chef's private table and P'yote, the rooftop bar, round out the evening.

Mexican flavors, French technique — chicatanas, quelites, ayocote beans and red mole share the menu with foie gras, caper meunière and crème brûlée.
The Temptation Menu — a tasting menu that opens with an amuse-bouche, offers a choice of two dishes at each of six courses and ends with a macaron.
Courtyard, piano and rooftop — a reflecting-pool courtyard, live piano every evening and the P'yote roof bar, which the resort calls the place where sunsets become a ritual.
Cream of Prawn and Pumpkin Soup — a 12-ounce bowl that the menu calls a 33-year tradition of the house.
Tuna Tartare over Salt Block — tuna and avocado on a salt block for sharing, with bread chips, habanero mayonnaise, seaweed, radish, salmon roe and Istmeñas tostadas.
Foie Gras Crème Brûlée — foie gras set as a crème brûlée and served with cassis sorbet and spice bread.
Broiled Octopus with Chicatanas — marinated octopus with smoked organic beets, green pea mousseline, beef and scallop tartare, bone marrow and red wine sauce.
Suckling Lamb — a pistachio-crusted lamb chop with crunchy ossobuco, eggplant cloud, braised carrot and crunchy garlic.
Habanero Chili with Passion Fruit Mousse — a habanero chili filled with passion fruit mousse, served with almond crumble and vanilla ice cream.
