Baja Brewing Company (Cabo Villas Rooftop)

Baja Brewing Company sits seven floors above Medano Beach at Corazon Cabo Resort and Spa (the 2022 rebrand of the former Cabo Villas property), pouring the craft beers that put Los Cabos on the brewing map. Founded in 2007, it remains the first and only microbrewery in all of Baja California Sur, and its rooftop cantina is a Cabo institution: open-air, ocean-breezed, and aimed straight at Land's End. Misters cool the lounge through the afternoon, a fire pit warms the deck after sunset, and a low-slung beer garden vibe makes it equally at home with surfers in flip-flops and resort guests dressed for dinner.

The kitchen is more ambitious than the brewpub setting suggests. The wood-fired pizzas were featured in Food and Wine magazine and remain the dish locals come back for, blistered crust paired with house-brewed beer. Pub classics like burgers, wings, chicken fingers and onion rings share the menu with grilled New York strip, fresh-catch fish and Baja-style tacos, so a craft-beer flight on the deck can easily turn into a full dinner without ever leaving your seat.

What to order: start with a flight of the house lineup, which rotates around eight recipes including Cabotella Blonde Ale, Escorpion Black Lager and the flagship Peyote Pale Ale. The wood-fired Beer Pizza is the signature plate, followed closely by the Basil-Blue Cheeseburger and a stack of Baja fish tacos built on locally landed fish. For the table, the wings and onion rings travel well with a cold pint, and the grilled New York strip is the move when the group wants something more substantial.

The brewery: Baja Brewing Co. has been racking up medals at Mexican craft-beer competitions since the late 2000s, and the brand's rooftop cantina was an early proof point that Los Cabos could host a serious microbrewery scene. Its beers are now distributed across Baja Sur and stocked in resort bars throughout the region, but this rooftop is the brewery's flagship public-facing taproom.

Best for: sunset drinks with Land's End in the frame, casual group dinners, sports nights on the big screens, live music evenings with classic rock, funk and salsa, and any traveler who wants a craft-beer break from margaritas. The private terrace handles small events and birthday groups, and the all-day kitchen makes it equally workable for a late breakfast, a poolside lunch break or a long dinner that bleeds into midnight.

Getting there: Corazon Cabo Resort and Spa sits on Medano Beach at Pelicanos 225, El Medano Ejidal, Cabo San Lucas 23453, a short taxi ride from the Cabo San Lucas marina and downtown. Take the resort elevator to the seventh floor. Valet parking is available at the hotel, and beach access from the Medano side is also walkable for anyone already strolling the bay.

Walk-ins are welcome at the bar, where the eight house beers and the rooftop view are reason enough to stop in even without a table.
