    Hoshi at One&Only Palmilla is the most coveted reservation in Los Cabos right now: a 28-seat omakase counter tucked inside the resort's iconic white bell tower, where chef Hiroki Arai and his team turn Baja seafood and premium Japanese imports into a quiet, ritualistic tasting menu. The name Hoshi means "star" in Japanese, and the room's design — undulating pendant lamps that mirror the Sea of Cortez, pale stone, blond wood, and a tiny sake bar — is built around the ancient celestial love story of Vega and Kengyuu. It opened in May 2024 as the first Hoshi outside Asia, joining sister venues at One&Only Desaru Coast in Malaysia and One&Only Reethi Rah in the Maldives.

    What to order. Hoshi is omakase-only, with three multi-course tasting menus that change with the season and the boats. Expect a parade of nigiri built from bluefin, skipjack, and yellowfin tuna, hand-cut sashimi, tempura, and dishes off the robata grill. At Hoshi he leads the omakase counter himself most nights, walking guests through the provenance of each fish, the rice, the wasabi, and the sake pairings.

Hoshi sits inside One&Only Palmilla at Km 7.5 of the Carretera Transpeninsular in the Tourist Corridor, roughly 20 minutes from San Jose del Cabo (SJD) airport and 25 minutes from downtown Cabo San Lucas. Outside guests are welcome but must be cleared at the resort gate, so confirm your booking name in advance and allow a few extra minutes at security. Valet parking is complimentary for diners.
