Set down a dirt lane in El Pescadero, just north of Todos Santos, Hierbabuena is a farm-to-table restaurant where the kitchen begins in the soil. Guests arrive through rows of an organic hortaliza, the on-site garden that supplies herbs, greens, tomatoes, peppers and squash harvested the same day they are served. The cooking is unfussy and seasonal, leaning on what the beds and the local fishermen and ranchers provide, and the result is one of the most literal expressions of farm-to-table cooking in southern Baja. Open since 2013 and run by the Ramirez family, it has earned a loyal following from Pescadero, Todos Santos and the wider Los Cabos region for honest food in a genuinely rural setting.
The dining room is a breezy open-air palapa with a corrugated metal roof, exposed beams and concrete floors, framed on every side by the garden and the open desert beyond. Rustic wooden tables, woven bistro chairs and pops of bright paint give it a relaxed, lived-in feel, while a wood-fired oven and an open kitchen anchor one end of the space. By day the light is bright and the planting beds are in full view; by evening, pendant lamps and a hand-lettered chalkboard menu turn the palapa into a warm, low-key gathering place. There is no dress code and no rush here. The restaurant serves on a walk-in basis, and the mood is firmly that of a country garden table rather than a polished dining room.
A garden you can eat from — The on-site organic hortaliza is not decorative. Herbs, lettuces, cabbages, peppers and squash are picked from the beds the same day and carried straight to the open kitchen, so the menu shifts with the harvest.
